Marinated Mushrooms

Marinated Mushrooms
Serves 16

1/3 cup red wine vinegar
1/3 cup olive oil
1 small onion, very thinly sliced
1 tsp. salt
2 tbsp. dried parsley
1 tsp. dry mustard
1 tbsp. brown sugar
2 cloves garlic, crushed, or 1 tsp. garlic puree
1 pound small button mushrooms

Mix vinegar, oil, onion, salt, parsley, mustard, brown sugar, and garlic in a medium saucepan. Bring to a boil. Reduce heat and add mushrooms. Simmer 10-12 minutes, stirring occasionally. Let cool before serving.
